Funky Fat Foods was founded in 2018 by Louisa Mesquita Bakker, an Amsterdam-based nutrition enthusiast whose parents ran a health store in the city. After a PCOS diagnosis in her early twenties left her with little more than a birth control prescription, she went deep into low-carb research, reversed her symptoms through diet, and set out to make chocolate that matched how she ate. The result was KetoCacao, launched after a 2017 trip through South American cacao farms.

Every Funky Fat bar is built on three organic ingredients: cacao (mass, butter, or coconut milk powder for the white), erythritol, and MCT powder from coconut with acacia fibre. That's it. Around 2.5g net carbs per bar, no soy, no dairy, no sneaky fillers; vegan and 100% organic across the line. The added MCTs are the clever bit: coconut-derived fats that metabolise straight to ketones, so the chocolate actually fuels the state you're trying to stay in.
